This might be a function that I just didn't find. I am currently deploying Kace so not super familiar. But is there a best practice way to assign a cost to a device?

This is what asset management is for.
Go to Asset Management |Asset Types and click the Asset Type "Devices".
Add the cost field, purchase number field, purchase date and what you need in addition.
Save and you are done.
