I'm having a difficult time identifying service desk tickets that have been recently updated/changed. Is there a way show this type of info on the tickets list? or maybe a custom view?

You can add the "modified" column to the tickets tab if you like. That it will show the last time time the ticket was changed in any way. It can be found under "Customize fields and layout" under the queue you want to see that column in.
