Currently I have hidden the Priority field from the regular users and have only made the Impact field visible.
Is there a way to make it so that if the user selects the "Many people can't work" or "I cannot work" in the Impact field, the priority is set to "High" on ticket save/ Ticket Creation.

Simply create a ticket rule to set the value. If your sql skills are not up to much, create a rule for each setting you want to have. Set the rule to run on ticket save and only when the status of the ticket is not equal to closed, so you only update live tickets
