We are using K1000. I have added the categories in the ticket configuration panel but I would like to have the Owner information autofill based on the category that is chosen.

I believe this is what you are looking to do:

This is handled under
Help Desk
Queue Configuration
Click on Customize Fields and Layout near top of page

you can then assign a default owner for all of your various categories of Help Desk values
