Is there a registry setting or option via mst to set Adobe Acrobat's default save version? Although we have Acrobat 8 in our environment I would like to set the default save version as Adobe 7 for a specific group of users.

Why don't you use the vendor supplied tool for customizing it? If I understand well you want this specific users to open your document in Reader 7 as well. Here's the link. Under Installation Options->Default Viewer for PDF files.

Holy cow! Why not simply capture the change or monitor it with a process/file/registry monitor like ProcMon?!?
