We setup retail stores as assets in the k1000.  If we were to add an email field in the Store Asset Type for say the store manager, would it possible to create a schedule report that will email whichever address is that field?

You can most likely do this via custom service desk ticket rules.  Take a look at this http://www.itninja.com/blog/view/using-custom-ticket-rules-to-work-with-custom-assets for a starting point.
