Hi,
does anyone have tips on how to achieve a clean uninstall of a product where a user has an option to delete the entire file structure (including directories (2locations) & all files) when they choose to uninstall the product?

You need a Custom Action, conditioned to run on uninstall (REMOVE~="ALL"). That CA could be script or a simple call-out to something like KillDir. I prefer the scripted approach because you can test for success, post message to the Windows Installer log and so on.
