Month and Day Switch on tickets after update to 8.1.108

We upgraded our appliance to 8.1.108 not too long ago and now we are having, and now we are running into an issue when one of our users creates a ticket they set the date at June 6th and later they access the ticket and find that the date has been changed to July 7th.
We have tried to deal with support over this but they give us "it's your users, not us."
I am hoping to get a conversation started here to fix the issue
