I know there have likely been threads like this before, but can I please get your take on what tool set you use and why? have you evaluated both? What did you find?

Do a search, there are many such threads. In a nutshell, InstallShield tends to be favored by application developers, Wise tends to be favored by Corporate Repackaging teams. They're pretty much neck & neck. If either product gets a new feature, it's almost guaranteed to be included in the other product's next version.

I agree with Viking, basically Wise is considered to be nice for repackaging and for complex installations Installshield is preferred since it gives much more flexibility in terms of coding to a developer. I hope this would answer your question, enjoy.
