I have been doing google-fu for a while trying to find documentation on this. I would like the full list of available variables for email templates on the K1. I cannot seem to find any information. Any help would be appreciated.

From you Kace Appliace go to Settings -> Support -> Under "Documentation" click Service Desk Administrator Guide. 

Once you have the guide open, from the menu on the left:

Service Desk Administrator Guide
    Setting up Service Desk
        Configuring Email Settings
            Configuring Email Triggers and email Templates
                Configure email templates.

Now be aware (I learned this the hard way) that there are different variables for SQL queries and for Emails.  Also, there are some variables that work in the email's generated by the system and different ones that work in emails created by things like custom ticket rules.  Hopefully this will get you a head start though!!
