Answer Summary:
Use the REMOVE_PREVIOUS=YES command or the Adobe Customization Wizard to create a MST file: http://www.adobe.com/support/downloads/detail.jsp?ftpID=4950

Change the file name to match what you are deploying.

Adobe Reader has a populated upgrade table already, set by the vendor, to upgrade from previous versions (version 6 and above I think).

Use the Adobe Customization Wizard to produce your MST for the installation and test, test, test.

You can download old versions of Adobe Reader for your testing from http://www.oldapps.com - here's a link for Adobe Reader: http://www.oldapps.com/adobe_reader.php

Hope that helps,
