I have never had to try and just uninstall a single component of Office before. From the little bit of research that I have done so far it appears that I need to create an .msp file for the uninstall of the component. Is this correct? Or, is there a better way to accomplish this. Basically, I need to uninstall the InfoPath software from the 2003 Office install that is already on systems so I can then install InfoPath 2010.

just make the new package for InfoPath 2010 (setup.exe /admin to create the .msp) and choose under remove previous installations: InfoPath2003 to remove erlier installations.
This will uninstall 2003 and install 2010.
