Is there any way to display a submitters email address instead of their name in service desk? At the moment it shows their first and last name and I would prefer the email adress instead. Is this possible?

What you could do is make a customfield that populates with the users email address (and a rule that says to update hd_ticket to have custom_field_value# = submitter.mail) and then on your ticket layout settings to remove the SUBMITTER column and add in your own column.  When making this custom field in ticket layout, you cannot have it "hidden" or you wont have it as a layout option, so it's best to set it to owners only, hidden from users.
