Custom Inventory fields can only be added into the Software area of inventory, so that will not work as you cannot select to view a software field in an Inventory list.
The same goes for Asset, you can add a user field to your Device Asset record, but it cannot be displayed in an inventory list.
You can add "Last User" to the list and that is about as good as it gets in the current version
