Apple QuickTime|iTunes = Safari + Bonjour

I'm looking for information on how to prevent the automatic upgrade of Apple QuickTime or iTunes that includes Safari and Bonjour. When users use my packaged QuickTime installation, I've turned off Apple Software Update. But when they install QuickTime or iTunes themselves, Apple Software Update is on, and so they will be asked to "upgrade" Safari and Bonjour, neither of which they have.

I found this Web site where the author offers one possible solution for blocking Safari, a solution I haven't tested yet:

But I'd like a more general solution good for all versions of Safari. And I'd like a solution to prohibit the installation of Bonjour as well. Our network admins do not want Bonjour broadcasting all over the place!

What about a group policy object software restriction policy hash rule to prevent installation?
